LA PLUS ANCIENNE PÂTISSERIE DE PARIS
Stohrer, the oldest pastry shop in Paris, was founded in 1730 by the pastry chef to King Louis XV, Nicolas Stohrer. This institution on rue Montorgueil has everything of a myth... A sumptuous decor classified as a Historic Monument, signed by a student of Paul Baudry (who worked on the decor of the Opéra Garnier).
A temple of sweet and savory, where everything is made on site to offer, century after century, the best of classic French pastries. Rum babas (invented by Nicolas Stohrer), wells of love, old-fashioned nuns, exceptional queen-style bites…
Faithful to traditions, the Dolfi family, who hold the reins of the Maison, wishes to perpetuate the spirit of Stohrer by relying on an exceptional heritage and the know-how of its team of pastry chefs.
NICOLAS STOHRER, THE LEGACY OF A VISIONARY
Pastry chef of Stanislas Leszczynski, ex-king of Poland, Duke of Lorraine and father of Marie Leszczynska, future wife of Louis XV. He is the creator of rum baba, a legendary recipe born from a kouglof considered too dry by Stanislas, which the pastry chef washed down with Tokay wine (rum came in later) or Malaga, according to divergent versions. We also owe him a number of other great classics of French pastry, from the chiboust tart to the well of love to the old-style nun.
He was also visionary in his way of to understand the profession of pastry chef. By setting up on rue Montorgueil, he invented a form of modern sweet food business, offering choux pastry in all its forms. And by bringing together in one place skills and professions that did not coexist until now: pastry chef, of course, but also confectioner, oubloyer, gastelier, grocer's bread maker, waffle maker... With Nicolas Stohrer, the pastry chef stopped to simply be the one who makes various savory “pâtés” to embrace all the facets of sweetness, without departing, obviously, from his famous “bouches à la reine”, of which he was the inventor, and who still bring the whole of Paris to 51 rue Montorgueil.
The Stohrer repertoire is incomparable: they always offer the best of classic French pastries. Rum babas, invented by Nicolas Stohrer, old-fashioned nuns, sweet and savory tarts, but also exceptional queen-style bites.
A HISTORICAL CONNECTION, IN 2017
La famille Dolfi qui reprend Stohrer, c’est la rencontre de deux histoires et un nouveau chapitre qui s’ouvre pour la Maison de la rue Montorgueil, placée désormais sous le signe de l’excellence classique combinée à l’expertise de cette famille devenue, au fil des ans, la « gardienne » des savoir-faire sucrés.
